Turkey and Spinach Crescents
A great way to re-purpose turkey leftovers!


·         2 cans of Pillsbury crescent dinner rolls

·         1 cup of cooked, chopped Turkey breast
·         1 cup of frozen spinach, thawed
·         8 slices of Swiss cheese


Preheat oven to 350 degrees

Unroll each crescent roll

Place ½ slice of Swiss cheese on each crescent

Add turkey and spinach to each crescent

Fold crescent over and bake on ungreased, non-stick cookie sheet according to package directions

Serve hot

Makes 16 crescents   Prep time: 10 mins.  Cook time: 11-13 mins.

Spanish Rice

·         1 cup of cooked rice
·         2 tablespoons of chunky salsa
·         ½ cup of chopped onions
·         ½ cup of red, yellow and green peppers
·         Season with salt, pepper and garlic powder

Add the salsa, onions and peppers to cooked rice.

Season to taste and serve hot.

Chicken ala Queen

·         4 Boneless, skinless chicken breast
·         1 cup of rice
·         1 cup of fresh frozen green peas
·         1 can of Cream of Mushroom soup
·         seasonings

Season the chicken breast and either grill or pan fry until cooked thoroughly (165 degrees)

Cook rice according to package instructions (or use Minute Rice)

Prepare soup in a saucepan, adding peas to soup while simmering

Place rice on plate with chicken breast on top, pour 1/4 cup of soup over chicken and rice, serve!

This dish takes 30 minutes and feeds up to 4. Enjoy!
